Apricot and raspberry compote

- 240 g raspberries
METHOD
1.
Wash the apricots well but don’t peel it as a lot of vitamins sit just underneath the skin. Wash and drain the raspberries.
2. Stone the apricots and cut each half in four pieces. Put them in a pan with a splash of water, bring to a gentle boil and simmer for 15 min or until the apricots are very soft. Add the raspberries and cook for another couple of minutes.
3. Mash with a spoon, fork or blend in a food processor, depending on what texture you need. [/vc_column_text][vc_column_text el_class=”preparacion”]

This fruit compote can be frozen in little pots and used to mix with cereal or yogurt for babies.[/vc_column_text][vc_column_text el_class=”preparacion”]
VARIANTS
Pear and raspberry compote.
Apple and prune compote.
Apricot and raspberry.
Plum , nectarine and vanilla: wash, stone and chop the fruit before putting it in a pan with a splash of water. Simmer slowly for 10-15 min until berry soft. Add a 1/4 tsp of vanilla essence.
