Apple and prune compote

  • Few drops lemon juice
  • 4 prunes
  • 3 dessert apples

METHOD

1. Wash the apples well but don’t peel it as a lot of vitamins sit just underneath the skin.
Prunes are very high in fibre. This compote works very well to loosen things up when children are constipated.

2. Core the apples and chop them in regular size slices. Put them in a pan with the prunes, a splash of water, lemon juice and the cinnamon stick if using.

3. Slowly bring to the boil and simmer gently for 15-20 minutes until the fruit is soft enough to mash them with the back of a spoon. If the prunes were not stoned, they should have fallen out and at this stage you can pick them out easily and discard them.

4. Mash with a spoon, fork or blend in a food processor, depending on what texture you need.

This fruit compote can be frozen in little pots and used to mix with cereal or yogurt for babies

Plum , nectarine and vanilla: wash, stone and chop the fruit before putting it in a pan with a splash of water. Simmer slowly for 10-15 min until berry soft. Add a 1/4 tsp of vanilla essence.
Or try any other fruit combinations: pears, apples and blueberries, strawberries and peaches, etc
