Apricot and raspberry compote

  • 8 Fresh apricots
  • 240 g raspberries

METHOD

1.
Wash the apricots well but don’t peel it as a lot of vitamins sit just underneath the skin. Wash and drain the raspberries.

2. Stone the apricots and cut each half in four pieces. Put them in a pan with a splash of water, bring to a gentle boil and simmer for 15 min or until the apricots are very soft. Add the raspberries and cook for another couple of minutes.

3. Mash with a spoon, fork or blend in a food processor, depending on what texture you need.

For babies from 9 months onwards.
This fruit compote can be frozen in little pots and used to mix with cereal or yogurt for babies.

VARIANTS

Pear and raspberry compote.
Apple and prune compote.
Apricot and raspberry.
Plum , nectarine and vanilla: wash, stone and chop the fruit before putting it in a pan with a splash of water. Simmer slowly for 10-15 min until berry soft. Add a 1/4 tsp of vanilla essence.
….Or try any other fruit combinations: pears, apples and blueberries, strawberries and peaches, etc.
